Soak 2 pieces ambula (sun-dried mango) in ½ cup water. Blend 1 tbsp mustard seeds + 1 tsp cumin seeds + 3-4 whole red chilies + 4-5 garlic cloves with a little water into a smooth paste. Heat 2 tbsp mustardoil in a kadhai, add 1 tsp panch phutana and let it crackle, add 1 chopped onion and sauté until soft. Add 400g cleaned mushrooms (pala chhatu) + 1 potato (wedged), cook until mushrooms release water and it evaporates. Add ½ tsp redchili powder + ½ tsp turmeric + salt, sauté briefly. Stir in the mustard paste, 1 chopped tomato, and 2-3 green chilies, cook 1-2 min. Add ½-1 cup water, cover, cook until potatoes are tender. Stir in soaked ambula with its water, simmer1-2 min more.
