Clean and quarter 1 whole crab (~1kg),crack the claws. Blend 4-5 soaked dried chillies + 2 fresh red chillies + 4 garlic cloves + thumb of ginger + 1 tbsp sambal into a smooth paste. Fry the paste in hot oil 3-4 min until fragrant. Add crab, stir-fry 2 min. Add ½ cup ketchup + 2 tbsp chilli sauce + 1 tbsp sugar + 1 cup water + pinch of salt. Cover and simmer 8-10 min until shell turns bright red. Thicken with 1 tbsp cornstarch mixed in water. Swirl in 1 beaten egg to form ribbons. Garnish with spring onion and coriander.
