Heat 3 tbsp mustard oil until it smokes slightly, lower heat, add ½ tsp kalonji + 2 slit green chilies, fry 10 sec until aromatic. Mix mustard paste with ½ cupwater + remaining turmeric + salt, pour in and bring to a gentle simmer. Slide in the fish, cover, cook 5-6 min. Flip, add remaining chilies, cover, cook 4-5 min more until flaky and oil separates on top.
