Let cool completely.Vanilla Pastry Cream -½ vanilla pod250 ml (1 cup) cream4 egg yolks50 ml (¼ cup) sugar1 tsp vanilla sugar2 tbsp cornstarch25 g (2 tbsp) butterHeat cream with vanilla.
Whisk egg yolks, sugar, vanilla sugar, and cornstarch.
Slowly add warm cream while whisking.Return to heat and cook until thick.
Strain, then whisk in butter.
Chill completely.Sponge Cake -4 eggs200 ml (1 cup) sugar100 ml (¾ cup) flour100 ml (¾ cup) potato flour2 tsp baking powder1 tsp vanilla sugarBake at:
👉 175°C / 350°F
for ~40 minutesCool completely, then slice into 3 layers.Layer as follows:SpongeRaspberry jamSpongeVanilla custardSponge400 ml (1 ¾ cups) whipping creamWhip to soft peaks.Spread over the cake, adding extra in the center to create a rounded dome shape.400 g green marzipanRoll out to 3–4 mm thickness.
Carefully cover the cake and smooth it down.
